and stir until mixed well and all the cereal is completely coated.

2. Butter your hands and the cookie cutter.

3. Gently press a scoop of Rice Krispies mixture into the cookie cutter. Next, push it out onto the parchment paper. You should now have 1 rice Krispie.

4. Repeat for remaining treats and let treats cool completely. Each batch makes 3 Rice Krispies Hearts.

5. Once treats are cooled, press lollipop sticks into the bottom of each treat.

For the icing:

Mix 1½ cups of powdered sugar with 2 tbsp of milk . Drizzle icing over treats. I scooped the icing into a frosting bag fitted with a #2 tip then drizzled it over the treats.

Optional: Sprinkle rainbow sugar crystals over the fresh icing.

Recipe via paninihappy.com

1. Heat the panini press to medium-high heat.

2. For each sandwich: Spread butter on one slice bread, then flip it over and spread 1 to 2 tablespoons of chocolate spread on the other side (if you’re planning to trim the crusts, it isn’t necessary to spread the chocolate all the way to the edges of the bread). Butter a second slice of bread; with a heart-shaped cookie cutter, punch a heart out of the center of the bread. Position the bread slice with the heart “window” on top of the first bread slice, creating a sandwich, so that the chocolate spread appears through the heart. If you’d like, trim away the bread crusts.

3. Grill two panini at a time until the bread is toasted, 3 to 4 minutes.

Boozy Brownie Pretzel Trifles

Is your relationship salty and sweet then this delicious concoction is the one for you.

1. To make the whipped cream – add the heavy cream, sugar, irish cream and vanilla extract to the bowl of a stand mixer fitted with the whisk attachment. Start with the mixer on low and then increase the speed to medium high. Whip until stiff peaks form. Do not over beat, or the mixture will look curdled.

2. To assemble – place a few brownie chunks in the bottom of a small jar. Layer on some of the whipped cream, then some of the crushed pretzels. Repeat this process until the jar is full, ending with the pretzels.

Skinny Love Heart Shaped Sugar Cookies

The healthy cookies are the perfect treat for couples looking to adopt a healthier lifestyle while still reveling in their skinny love.

1. To prepare the cookies, whisk together the 1 ¼ cups of flour, cornstarch, baking powder, and salt in a medium bowl. In a separate bowl, whisk together the butter, egg, vanilla extract, and butter extract. Stir in the sugar. Add in the flour mixture, stirring just until incorporated. Shape the dough into a 1”-thick rectangle. Tightly cover with plastic wrap and chill for 1 hour.

2. Preheat the oven to 350°F, and line two baking sheets with parchment paper.

3. On a well-floured surface, roll out the chilled dough until 1/8” thick. Lightly flour a 3” tall heart-shaped cookie cutter and press into the dough, making sure each heart lays as close to its neighbors as possible to minimize unused dough. Peel the unused dough away from the hearts, and place the hearts onto the prepared baking sheets. Reroll the unused dough, and repeat.

4. Bake the heart-shaped dough at 350°F for 10-13 minutes. (The rerolled dough generally requires a little less time.) Cool on the baking sheet for 5 minutes before turning out onto a wire rack to cool completely.

5. To prepare the icing, stir together the powdered sugar, vanilla, milk, and food coloring in a small bowl. Spoon into a zip-topped bag, and snip off the corner. Pipe onto the cooled cookies.

Cupcakes with a Savory Twist: Lasagna Style

Savory isn’t a flavor that usually comes to mind when thinking of cupcakes or other baked goods and treats, but that doesn’t have to be the case. As cupcakes as a brand continue to sweep the country and become ever more popular owners and chefs have to continually come up with new, innovative ideas to keep the trend fresh and exciting in the eyes of the consumer. Enter the lasagna cupcake. While not necessarily a new idea the lasagna cupcake is the perfect twist on a regular sweet cupcake to get consumers excited and out to their local cupcake shop or bakery.

Lasagna Cupcakes

Source: tablespoon.com

No one wants to devote the time and energy required to make a whole pan of lasagna when more often than not you’ll tire of all the leftovers after a couple days and then it just feels like a waste, making lasagna cupcakes the perfect substitute for a family gathering or addition to any party.

This savory is treat is crafted using wonton wrappers nestled in muffin tins to create that classing layered element lasagna is known for. The original recipe calls for beef, but that can easily be swiped out for something that suits your unique tastes. You could even substitute zucchini or another vegetable to create a delectable vegetarian version.

Recipe via tablespoon.com

  • 1/3 pound ground beef
  • Salt and pepper
  • 24 wonton wrappers or boiled lasagna noodles (about 6-8)
  • 1 3/4 cups Parmesan cheese, grated
  • (divided)
  • 1 3/4 cups mozzarella cheese, shredded (divided)
  • 3/4 cup ricotta cheese
  • 1 cup jarred pasta sauce
  • Basil for garnish (optional)
  • Preheat oven to 375 degrees. Spray muffin tin with cooking spray.
  • Brown beef, and season with salt and pepper. Drain.
  • Cut wonton wrappers or lasagna noodles into circle shapes (about 2 1/4- inches) using a biscuit cutter or the top of a drinking glass. You can cut several at a time. Note: For a more rustic look, no cutting necessary!
  • Reserve 3/4 cup Parmesan cheese and 3/4 cup mozzarella cheese for the top of the cupcakes. Start layering the lasagna cupcakes. Begin with a wonton wrapper and press it into the bottom of each muffin tin. Sprinkle a little Parmesan cheese, ricotta cheese, and mozzarella cheese in each. Top with a little meat and pasta sauce.
  • Repeat layers again (i.e. wonton, Parmesan, ricotta, mozzarella and pasta sauce). Top with reserved Parmesan and mozzarella cheeses.
  • Bake for 18-20 minutes or until edges are brown. Remove from oven and let cool for 5 minutes. To remove, use a knife to loosen the edges, then pop each lasagna out.
  • Garnish with basil and serve. Makes 12 cupcakes.

5 Bakery Trends to Expect for 2015

Last year gave birth to the cronut and saw the steady decline of the cupcake. In many ways baking baking is emblematic of the trends we are seeing in the larger food industry as a whole. For example you saw the trend of consumers becoming more health conscious reflected in baking before other areas along with the idea of combining different foods as well.

Baking Trends

Source: blog.foodnetwork.com

For those reasons baking is often a buzzword in the food industry because it’s ever changing and always evolving. This explains why it’s often the case as bakers become more adept with their skills they become less afraid to tackle creative, elaborate creations and put into practice tricky, more classic techniques.

With that in perspective here’s 5 bakery trends to expect for 2015:

1) Rollover Doughnuts

Last year the cronut became a staple in bakery’s across the country after they gained widespread popularity as a delicacy in New York. Rollover doughnuts based in Phoenix are more of a brand than a delicacy and as a result they offer a menu of brioche doughnuts and fritters in a variety of flavors from the normal, regular, every-day cinnamon sugar to the odd, unique, and different hot dog inspired Bear Doughnut.

2) The Bakeover

Around the country “mash-up” bakes have been increasing in popularity and will hit a peak in 2015. Delicacy’s like “sticky toffee pie” and “party dodgers” amongst others will become household names in 2015. Bbcgoodfood.com has recipes for even more of these creative combinations.

3) Artisanal Bread

Now the bread category of baked goods has been in decline in recent years, but that’s all about to change. Not only are consumers now actively seeking out healthier choices, they are seeking out fresher choices as well. Enter artisanal bread. Artisanal bread is a freshly baked bread that capitalize on the fresh trend and will certainly the bread category recover.

4) Sweet & Salty Treats

Sweet and salty combinations have been in the public consciousness since chocolate covered pretzels and chocolate covered nuts caught fire. Now herbs and spices in baked goods are becoming increasingly popular, partially because of how popular those original combinations were. Some of the most popular sweet and salty treats of today are chocolate covered bacon and salted caramel.

5) Choux Pastries

The winner of the first Great British Bake Off Edd Kimber is a big fan of the Parisian patisserie and is confident that we’ll see a widespread increase in it’s popularity during the coming year. The classic French Pastry has a chewy texture and buttery flavor and in that respect it’s similar to an eclair. The popularity increase eclairs saw this past year could very well be foreshadowing to the choux pastries growth this year and Kimber is betting on that.

5 Ways to Make Your Bakery’s Cupcakes Rise Above the Rest

In the bakery industry there is no more popular an item than cupcakes. Cupcakes have been a bakery staple for generations, but with the market loaded with specialty cupcake shops bakers are struggling to make their cupcakes stand out from the rest. Here’s 5 ways to make your bakery’s cupcakes rise above the rest.

Cupcakes

Source: kimberlysnyder.net

  1. Never Over-bake

If you over-bake a cupcake, even slightly, there’s no way to save it and it definitely will not be moist on the inside. So bakers should always err towards under-baking cupcakes as a result. Ideally your cupcakes will look slightly sunken when they’re done rather than peaked.

  1. Experiment with flavors and colors

Once you have mastered a particular recipe you can begin experimenting with colors and flavors to add a personal signature to your cupcakes. Whether your favorite flavors are pineapple or cheery try incorporating them into both the cupcake and icing. You could also combine flavors to make something truly unique, a pina colada cupcake perhaps. You could even try filling your cupcakes with a unique flavor combination.

  1. Flavor Fillings

Fillings aren’t just for donuts anymore. In fact jams, custards, creams, or even an extra helping of icing can be exactly what your cupcake has been lacking. You can use a cupcake corer or a decorating bag and tip to inject even more of the scrumptious stuff into your cupcake.

  1. Top Them Off

After all it is not the decoration that makes the cupcake. In spite of looking prettier no one really wants to eat a cupcake that looks like an overdone gingerbread house. Keeping it simple with colorful sprinkles, flowers, bows, chocolate balls, or even a piece of fresh fruit like a strawberry, will fulfill all your cupcakes needs.

Cupcake_toppings

Source: yourcupofcake.com

  1. Display Matters

To ensure your cupcakes rise above the rest find creative and unique ways to arrange and display them in your bakery. You may want to stack your cupcakes on a tiered plate or fit them perfectly into a cupcake tree. Here decorations like bows, ribbon, and confetti can be exactly what you need to compliment your edible works of art.
